About Your Chef

Chef Adams is a graduate of Johnson & Wales University in Charleston, South Carolina, where he graduated with an Associates in Culinary Arts and a Bachelors in Food Service Management.

Adams’ passion for food first began as a young child following his grandmother and parents around the kitchen, watching and occasionally participating. 

He then worked in kitchens as a teenager washing dishes and prepping, and the seed was officially sewn. After serving in the United States Marine Corps (including the Presidential Honor Guard in Washington DC), he pursued his passion at Johnson & Wales, thereafter proceeding to spend the next 20 years learning, teaching, inventing and evolving in different settings throughout the Southeast (resort, restaurant, private club, culinary instructor, private chef, catering, food truck owner, supper clubs, and corporate), learning from amazing chefs, leaders and mentors along the way. 

In 2018 Adams and Julie spent three months in Europe walking the Camino de Santiago, a spiritual pilgrimage that reminded them to be positive, be present in the moment, and share joy. They also admittedly ate their way through France, Spain and Portugal, further inspiring Adams’ creativity. With the move to St Croix in October 2018, Chef Adams is excited to share his passion and mutually high expectations of food creativity, excellence, attention to detail, professionalism and superior service and quality.

Julie’s Love of the Grapes

During the Camino de Santiago Julie (Jules) Hayne was given the gift of three encounters along the Spanish road:

1) A Spanish grape farmer and “old school” winemaker in his underground cellar
2) A South African winemaker with an amazing attention to detail and a love for her newest technological marvels
3) A passionate Sommelier from Galicia who’d recently left his successful hospitality career behind to study wine and work at a Spanish vineyard once owned by Napoleon III and his wife Eugenia

These amazing people inspired Julie to leave Corporate America behind to follow her purpose to share joy along with her love of wine and wine knowledge, ultimately culminating in obtaining her WSET 1 and 2 in Atlanta, Georgia in May of 2019. Julie looks forward to “geeking out on wine” more and partnering with the fellow wine enthusiasts of St Croix to bring you an evolving Wine List worthy of your time and attention.
